Now food is my best friend and it's also the base of my Instagram account so I thought I'd share some of my recipes with you.

Mango + Strawberry Ice Lollies

Ingredients : 
Frozen Strawberries 
Rubicon Mango Juice
Ice Lolly Molds


- First freeze your strawberries 

- Once frozen (I left mine for the day and didn't let them defrost so my food processor felt like it was going to blow up) take them out and let them slightly defrost and pour out some mango juice into a cup (I just used this cup for the photo, I put the juice into a measuring jug after because it allowed easier pouring).

- Blend up your strawberries adding a small splash of water every now and then until it looks like really tiny strawberry ice flakes or ice cubes or something (it looked really cool).

- Using a little spoon scoop up a some strawberries and press them into an ice lolly mold until it's about half full, and using your finger, just lightly tap the top layer of the strawberry in the mold until it's flat.

- Pour the mango juice on top of the strawberry in the mold (unless you have another fruit that you'd also like to add to the ice lolly, if you do, add that first, then the mango juice because it won't sit on top of the juice).

- Freeze for a couple of hours.

- Take out of the freezer and if you can't get the lid off of the ice lolly, pour hot water on it for a couple of a seconds and it should come off easily.

- Take pictures for social media etc before it melts.

- And eat!

Strawberry Sorbet with Grated Dark Chocolate

Ingredients :
Frozen Strawberries
A Square of Dark Chocolate

- First, freeze the strawberries (if you have some of the blended strawberries from the ice lollies, just use them).

- Blend the strawberries, adding a splash of water every now and then until it is like tiny strawberry ice flakes or ice cubes.

- Put the mixture into a bowl.

- Take a square of dark chocolate (mine was 80% cocoa so it was really bitter alone) 

- Grate the square of chocolate into the smallest grated pieces as possible and mix in with the sorbet.

- Take pictures (I actually forgot to take a picture of it with the chocolate on it (what an idiot)

- And eat!!

Home-Made Pizza

I love pizza. Who doesn't? This pizza recipe is great to follow because it's quite simple and it's a nice thing to make for friends or family .... although I'd make sure you make the dough way before they are supposed to come round because it can take a while to make...

Ingredients ;
650 g of strong white flour
7 g of yeast
2 tsp of salt
25 ml of olive oil
50 ml of milk
325 ml water

- Firstly, mix the flour together. Then add the milk and olive oil to then mix. Then, gradually add the water to the bowl. (Add a splash of water, then mix and repeat until all of the water is finished)

- Secondly, once the mix can be classed as dough, sprinkle a bit of flour on a clean worktop/table and knead it until it's stretchy.
- Put the dough in a bowl, and dampen a tea towel. Cover the bowl with the dampened towel and place the bowl in a warm place (me and my chummie used the airing cupboard).
- Leave it for an hour and a half until it's doubled in size and knead again. (You might not need to put flour on the table, but I'd use a tiny bit, just in case it sticks to the table...)
- Put the dough back in the bowl with the dampened towel covering it, and put it back in wherever you stored it before, and leave it there for half an hour.
- Pre-heat the oven to the highest temperature it will go to, and I think it's time to set up your ingredients.
Ingredients ;
Tomato Puree or BBQ sauce (depends on what you like)
Cheese (any kind of cheese)
I used ;
Pepperoni
Tomatoes
Basil
Sweetcorn

- Roll out the dough into the shape that you want.

- Put the dough on the tray (I tried to make the pizza on the table and transfer it, to a tray, but it didn't work so I had the kind of restore the pizza on the tray - so make the pizza on the tray).

- Add the sauce, the cheese and the other ingredients of your choice.

- Once the pizza is made, cut off any excess dough and KEEP IT.

- Put the pizza in the oven for 10-15 minuets.

- Take it out for Instagramming purposes and eating purposes.

Home-Made Dough Balls


Ingredients ;
The left over dough (from the pizza)
Cheese
Pepperoni
Basil
I know some people like garlic sauce or garlic butter, but it's optional)
Left over pizza toppings

- Take the excess dough and knead it out (try not to handle it too much though, otherwise it will be tough and hard to mold later on)

- Roll out the dough so that it's slightly thin - but not too thin

- Get a knife (if you're using a sharp knife PLEASE be careful OR get an adult to help you out) and cut the dough into strips (they can be wide or skinny) and cross the dough strips over each other (you know what the British flag looks like, with all the crossed over strips? Make it look like that - but with as many strips as you want)

- Slightly press the middle of the cross-thingy

- If you're using garlic sauce or whatever, I'd brush the side facing upwards, with the sauce so that it's all garlicy on the inside.

- Put the cheese and other ingredients in the middle of the - thing (you'll only need like a pinch of each thing)

- Now carefully fold each strip of dough across the middle to make a ball shape.

- Place on a tray and repeat.

- You could also, cut out circles and place all the ingredients in the middle and lift up the sides and twist the top so that it looks like a Hershey Kiss kind of thing.

- Put in the oven for 5 - 10 minuets

- Instgram, Tweet, Facebook and Pin the pictures and eat.

Gluten Free + Dairy Free Chocolate + Coconut Cookies

Ingredients ;

200 ml of oats (like Nairn's or something if you want them gluten free. I think Tesco's own brand are gluten free too... You know what? Just read the label)
150 ml of almond flour
150 ml of unsweetened shredded coconut
2 tbsp of unsweetened cocoa powder
1 tsp of baking powder
A pinch of salt
1 egg 
100 ml of sugar or coconut palm sugar
2 tbsp of coconut oil (melted)
2 tbsp of cocoa butter (melted)

- Preheat the oven to 170 degrees C // 350 degrees F.

- In a food processor, finely grind the oats into powder.

- Mix the oats, almond flour, cocoa, coconut, baking powder + salt in a bowl.

- Whisk the egg + sugar (in another bowl) until light + fluffy.

- Melt the oil + butter in the microwave or over boiling water in a pot or something (don't mix with water - if you don't know what I'm talking about, just use the microwave - it's easier and quicker and probably safer)

- Add the dry ingredients with the oil + butter mixture with the sugar + egg mixture. Add half the flour mix, then add the wet ingredients then add the rest of the dry ingredients (I think it's for a gooey middle - mmm)

- Scoop out heaped teaspoons of dough - turning them into balls, + place them roughly 5 cm (2 inches) apart, then flatten them gently with a spoon or a fork.

- Bake them for about 12 - 15 minuets.

- I'd recommend letting them cool for a bit - it's probably not a good idea to eat them straight from the oven.....

- Enjoy :) - when they're not too hot....

Kale, Broccoli, Kiwi & Mango Smoothie

Ingredients :
125 ml water
Broccoli
1/2 of a mango
1 kiwi
A handful of curly kale (with the stem/stalk separated)
A handful of ice cubes (optional)
A good blender

- Wash the vegetables and peel the fruit (if you want to leave the mango skin on make sure you wash it - but I wouldn't recommend it).

- Cut your mango in half (if that hasn't been done already) and dice/slice that and the other ingredients. Rip the kale up if you have big pieces.

- Add all of the fruit (don't worry if it doesn't all fit, once it's blended there will be space for anything that didn't fit).

- If you are adding ice make sure that that goes in last - on the first time that you're blending (if you have to blend twice)

- Make sure the blender lid is securely fixed and blend until it is smooth and drinkable (you don't want big lumps of ice etc). I used the Nutri Ninja Blender so it was a really fast blending process.
Pour into a nice glass, add a straw, Instagram, Tweet, Facebook and Pin and then drink!

Birthday Cupcakes

Ingredients ;
Just under a cup (110 g) of butter (softened at room temperature)
Just under a cup (110 g) of caster sugar
2 free-range eggs (lightly beaten)
1 tsp of vanilla extract
Just under a cup (110 g) of self raising flour (I made my own using wheat free flour)
1-2 tbsp of milk (I used almond milk)
1 tsp of baking powder
1/4 tsp of salt



- Preheat the oven to 180 degrees C / Gas mark 4 and line a 12 hole muffin tray with cases.

- First crack the two eggs into a little bowl and just put them to one side.

- So I didn't have self raising flour so I kind of had to make my own. So you basically just need to mix up the flour, baking powder and salt in a separate bowl until it's fully mixed.

-  Cream the butter and sugar in a bowl until creamy and smooth and nice. 

- When it's all creamy and nice, beat in the eggs a little bit at a time, and then stir in the vanilla extract.

- Fold in the flour adding the milk a little bit at a time. (I completely messed up with the milk because I'd read the instructions wrong and added double the milk because I'd also read the butter cream icing so yeah I ended up using double so they came out slightly weird looking...)

- Put the mixture into the cases (I spooned 2 tbsps of the mix into each case) and put in the oven.

- Cook for 10-15 mins (I cooked for 30 mins because my cupcakes looked like they were failing). TOP TIP: If you stick a little wooden toothpick or a fork into a cupcake and it comes out clean then your cupcake is done and you can take them out.

- Leave them to cool for a while (I left mine overnight - but I did start cooking at like 8-ish and finished at 9 or something).

Butter Cream Icing

Ingredients ;
280 g of icing sugar
Just over a cup (140 g) of butter
1 - 2 tbsp of milk
A few drops of food colouring (I didn't have any so my icing was white)


Mix the butter until it's soft and creamy (I left the butter out the entire preparation of the actual baking of the cupcakes so the butter was already really soft).

Add half of the sugar to the butter and beat until smooth.

Then add the rest of the sugar with the milk until it's creamy and smooth.

Add 2 - 4 drops of food colouring if you want to.

Leave in the fridge for an hour or half an hour (I left the icing in the fridge over-night but that was because I wanted to ice in the morning).

Decorate your cakes.

Put the cakes in a nice box if you're like me and had to give them to a friend as a birthday present. I shredded coloured paper and just filled the box with it and it came out really nice. 

Take a picture and give to a friend / family member or just eat them yourself...

Berry Mix Smoothie

Ingredients ;

A handful of berries
1 nectarine
Half a mango
A handful of frozen berries (I had blueberries, cranberries and raspberries)
100 ml of water (more if necessary)
Honey

- Prepare the fruit (wash  the blueberries and nectarine and peel the mango).

- Add all the fruit to the blender with the water.

- Blend.

- Once fully blended add a drizzle of honey (or two) and blend again.

- Pour into a glass.

- If it isn't sweet enough add another drizzle of honey and mix in with a straw of a spoon or something.

- Then Instagram and Snapchat and all things social media

- And drink!
